Serve this delicious, almost risottolike pilaf alone as a side dish or add in your favorite vegetables and proteins to make a complete meal.
• 3 2/3 cups (865 ml) water
• 1/4 cup (60 ml) olive oil
• 1 jar Fruity Curried Rice Pilaf Mix
• Salt to taste
Combine the water, oil, and pilaf mix in a pot with a tight-fitting lid. Stir to mix well. Bring to a boil over high heat, reduce the heat to a simmer, cover, and simmer for 20 minutes, stirring every few minutes to prevent the rice from sticking to the bottom of the pot.
Remove the lid and continue to simmer for 5 to 7 more minutes, stirring almost constantly, until the rice is tender and almost all of the liquid has been absorbed.
Add salt to taste.
Yield: 4 servings
